Bird’s Nest Cookies

Bird’s Nest Cookies are the official cookies of the Birdsong site.  I’ve been making them this time of year, every year for I don’t know how many years. Here’s the recipe.  I know they are good, I just had a couple for dinner.


1/2 pound butter (room temp.)

3/4 cup sugar

2 eggs separated

1/2 teaspoon pure vanilla

2 cups flour

1/4 teaspoon salt

1 cup ground sliced almonds (with or without skin)

2/3 cup raspberry preserves

Beat butter and sugar and add egg yolks (save the whites for later).  Add vanilla. Scrape your bowl and add flour and salt. Form the dough into 36 balls.  Dip the dough balls a few at a time in the egg whites then gently roll them in the ground almonds.  Place on cookie sheets about two inches apart.  Before baking make a small indentation in the center of each cookie and fill with raspberry preserves. Bake at 350 degrees for 7 to 8 minutes.  Spin the tray and bake for 6 or 7 minutes more or until the preserves are bubbling and the cookies or just lightly tan around the edges.  Resist the temptation to pop on in your mouth right out of the oven.  Let them sit for a few minutes for the preserves to cool down.  Enjoy!
