Buckwheat Pancakes

Autumn is a time when we start to think about eating some heartier food. Chicken and orzo soup, pumpkin bread, hot chocolate and one of my favs- buckwheat pancakes.  Buckwheat is one of the most complete proteins found in the plant world. It is used to make buckwheat groats, soba noodles and blinis (tiny crepes you top with caviar and sour cream). But you have to try buckwheat pancakes.  Follow the photo recipe below.  All amounts are approximate, it makes about 4 good-sized pancakes. Enjoy!

 

Start with buckwheat flour, I like mine organic

For 1&1/2 cups of buckwheat flour add 1/4 teaspoon baking powder

1/2 cup of organic or raw cane sugar
